Easy Blueberry Cheesecake Baked Oats
2 bananas
60g vegan protein powder (we used vanilla!)
420ml vegan milk (we used oat milk!)
1 tsp baking powder
120g frozen blueberries
1 tsp maple syrup
6 tbsp vegan vanilla yoghurt
Drizzle of melted peanut butter, to serve
- Preheat the oven to 180/160C fan.
- Add the bananas to the bottom of a baking dish and roughly mash them with the back of a fork.
- Add the oats, protein powder, baking powder and milk. Mix until fully combined.
- Add the frozen blueberries to a small bowl with the maple syrup and place in the microwave to melt for 30 seconds or until defrosted.
- Drizzle the blueberries over the oat mixture, then top with spoonfuls of vanilla yoghurt.
- Swirl the topping together and place in the oven for 35-40 minutes or until cooked through.
- Drizzle with peanut butter and serve!
