Plant Based Gluten Free Oat Meatballs

2 tbsp chia seeds

3 slices of gluten free bread

80g Amisa Pure Porridge Oats

8 green onions, chopped

1 large carrot, chopped

3 cloves garlic

1 tsp ground ginger

100g chopped mushrooms

30g fresh parsley

75g sunflower seeds

2 tbsp tomato paste

2 tbsp soy sauce

1 tsp smoked paprika

1 tsp dried oregano

170g pinto beans

For serving:

Tomato pasta sauce

Gluten free spaghetti

  1. Preheat your oven to 200°C/180°C fan and line a baking tray with baking paper.
  2. Add chia seeds into a bowl along with 60ml of water and let this sit for at least 5 minutes.
  3. In a blender, add the gluten free bread and oats then blend until a powder texture. Next add in chia seeds and all the other ingredients and blend until you reach a dough-like consistency.
  4. Roll the mixture into 12 small balls and place on the baking tray and place in the oven for 25 mins or until golden and crispy.
  5. Finally, serve with some delicious pasta sauce and spaghetti for the perfect dinner dish.
