Cooking oil spray
1 medium courgette
1 large egg
¼ medium onion, finely chopped
30g Cheddar cheese, grated
60g Amisa Gluten Free Organic Quinoa Flakes
Salt and black pepper to taste
- Preheat the oven to 200°C (180°C fan-assisted). Spray a baking tray with cooking spray.
- Grate the courgette into a clean dish towel and squeeze all of the excess water out. In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.
- Spoon 1 tablespoon of mixture in your hands and roll into small ovals. Place on the baking tray and bake for 16 to 18 minutes, turning halfway through cooking until golden. Serve and enjoy!
