Fluffy Oat Pancakes
For Pancakes
2 tbsp maple syrup
1 tbsp apple cider vinegar
2 tsp baking powder
¼ tsp bicarbonate of soda
250ml oat milk
For Topping:
50g vegan chocolate, melted
1 banana, sliced
- Blend oats until you reach a fine powder.
- Place the blended oats into a bowl, alongside the rest of the pancake ingredients and mix until you have a smooth batter consistency.
- Next, heat up oil in a frying pan and add a small amount of pancake batter. Cook for 2 minutes until you see little bubbles appearing.
- Flip the pancake and let the other side cook for another 2 minutes or until golden brown.
- Repeat for the rest of the batter.
- Finally serve up your pancakes with a drizzle of melted chocolate and top with some slices of banana and enjoy.
