Gluten-Free and Vegan Chickpea Salad French Baguette


For the Vegan Chickpea Salad

1 can of chickpeas

20g chopped parsley

20g chopped dill

2 tbsp wholegrain mustard

1-2 tbsp vegan mayo

Pinch of salt and pepper to taste


For the Sandwich

1 batch of vegan chickpea salad

2x Amisa Gluten Free French Style Classic Baguette

1 tbsp mustard

2 large lettuce leaves

1 thinly sliced cucumber

1 thinly sliced carrot

4 thinly sliced radishes

1 sliced avocado

Handful of sprouts

  1. Begin by preheating the oven to 200°
  2. Once the oven has preheated, place the part-baked baguettes onto a tray and into the oven to bake for 10 minutes.
  3. Next, start making the chickpea salad by placing all the ingredients together into a medium bowl, combining and smashing together and adjusting salt and pepper to taste.
  4. To assemble the sandwiches, spread a thin layer of wholegrain mustard on the bread.
  5. Next place on some lettuce and a generous amount of chickpea salad, layering sliced carrots, cucumbers, avocado and radishes.
  6.  Finally, sprinkle on some sprouts and enjoy an easy gluten-free lunch!
