Gluten Free Caramelised Banana Crumble
2 tbsp coconut oil
1 medium ripe banana, chopped
1 tbsp maple syrup
1 tsp peanut butter
2 tbsp chia seeds
1 tbsp cinnamon
100g plant based Greek yoghurt
Handful dark chocolate chips
- Start by melting the coconut oil in a large saucepan over medium-heat. Place half of the chopped bananas into the pan and fry with the maple syrup.
- Begin making the crumble by mashing the other half of your banana and mixing with oats, peanut butter, chia seeds and cinnamon.
- Add this crumble mixture into the frying pan then flip over your banana slices.
- Place the yoghurt into a bowl and top with the caramelised bananas, crumble, chocolate chips and enjoy!
