Oaty Ice Cream Sandwiches

We're aaalways in the mood for these delightful oaty 'wiches!

-1/4 cup coconut sugar
-1/2 tsp vanilla extract
-1/3 cup melted coconut oil
-2/3 cup maple or agave syrup
-1/2 tsp cinnamon
-1/2 tsp baking powder
-1/4 tsp salt
-1 1/2 cups oat flour (blend Amisa Organic Gluten Free Oats to make a fine flour)
-1 cup Amisa Organic Gluten Free Oats
-Your favourite ice cream flavour (we used vanilla)

  1. Preheat your oven to 180 degrees C and line a baking sheet with baking paper.
  2. Whisk together in a bowl. the melted coconut oil, maple/agave syrup, coconut sugar and vanilla extract until combined.
  3. Stir in the remaining ingredients to form a smooth batter.
  4. Scoop the batter onto the lined baking sheet (there should be enough for about 14) remembering to leave enough room for the biscuits to spread in the oven, and bake for 12-14 minutes until golden.
  5. Allow the biscuits to cool fully on a wire rack once out of the oven, meanwhile you can take your ice cream out of the freezer to soften a little.
  6. Once the biscuits are fully cooled, spread half of them with the softened ice cream, then top with the other half of the biscuits. Place the sandwiches back on the baking sheet and keep in the freezer like this until ready to eat!
