Plant Based Gluten Free Oat Meatballs
2 tbsp chia seeds
3 slices of gluten free bread
8 green onions, chopped
1 large carrot, chopped
3 cloves garlic
1 tsp ground ginger
100g chopped mushrooms
30g fresh parsley
75g sunflower seeds
2 tbsp tomato paste
2 tbsp soy sauce
1 tsp smoked paprika
1 tsp dried oregano
170g pinto beans

Tomato pasta sauce
Gluten free spaghetti
- Preheat your oven to 200°C/180°C fan and line a baking tray with baking paper.
- Add chia seeds into a bowl along with 60ml of water and let this sit for at least 5 minutes.
- In a blender, add the gluten free bread and oats then blend until a powder texture. Next add in chia seeds and all the other ingredients and blend until you reach a dough-like consistency.
- Roll the mixture into 12 small balls and place on the baking tray and place in the oven for 25 mins or until golden and crispy.
- Finally, serve with some delicious pasta sauce and spaghetti for the perfect dinner dish.
