Quick and Easy Mushroom Toast

1 tbsp olive oil

1 clove minced garlic

100g mushrooms

Handful of rocket

Salt and pepper to taste

1 Amisa Olive Ciabatta 

Vegan ricotta

Handful of chopped nuts

  1. In a saucepan, heat olive oil, minced garlic, and sliced mushrooms, and cook for 10 minutes over medium heat.
  2. Season the mushrooms with salt and pepper and add the rocket, stirring to warm through.
  3. Top the ciabatta with the mushroom mixture, vegan ricotta, chopped nuts, thyme, and a drizzle of oil.
  4. Finally, you are ready to enjoy a delicious gluten free lunch!
