Vegan Gluten Free Christmas Crumble

400g frozen cranberries

750g frozen berries

1 litre orange juice

100g pecans (chopped)

60g ground almonds

75g Amisa Pure Porridge Oats

Zest of 1 orange

100g coconut sugar

1 tbsp chia seeds

3 tbsp melted coconut oil

1 tsp cinnamon

1 tsp ground ginger

3 tbsp maple syrup

Vegan cream, to serve

  1. Preheat the oven to 200/180C fan.
  2. Place all of the berries into a saucepan and cover with the orange juice. Heat over a medium heat.
  3. Bring to the boil before reducing the heat and leaving to simmer for about 10 minutes until the berries are soft. Drain the liquid.
  4. While the berries cook, create the crumble mixture by placing the chopped pecans, ground almonds, porridge oats, orange zest, coconut sugar, chia seeds, melted coconut oil, maple syrup, cinnamon and ground ginger in a bowl. Mix until well combined.
  5. When the berries are cooked, place them in the bottom of a baking dish, stirring in three tablespoons of maple syrup.
  6. Place the crumble mixture on top and bake in the oven for about 10 minutes, until the crumble is golden.
  7. Once baked, remove from the oven and serve with some vegan cream for a delicious festive dessert.
