Zero-Waste Gluten Free Vegetable Fritters

1 tbsp olive oil

1 carrot shredded, or finely chopped

1 courgette shredded, or finely chopped

1 pepper shredded, or finely chopped

3 spring onions chopped

1 large garlic clove crushed

2 tsp spice mix of choice

Salt & pepper to taste

Handful fresh coriander

50g Amisa Chickpea Flour

75ml water

1 tbsp oil for frying

  1. In a pan, heat a tbsp of olive oil and add in your shredded vegetables, onions and garlic, along with your spices and seasoning to taste.
  2. Cook all the vegetables for 5 minutes until slightly softened. Once this is done, remove it from heat and fold in the coriander.
  3. In a large bowl, combine the gluten free flour and water together to create a pancake-like consistency.
  4. Once fully mixed, fold in the vegetables, creating the fritters mix.
  5. Next, heat up a pan with a dash of olive oil and scoop a dollop of the mixture into the pan, flattening and flipping on each side after 2-3 minutes.
  6. Finally, once the fritters have been cooked, you are ready to serve the fritters with a side of vegan mayonnaise. Enjoy!
